You are right that lots of time Hong Kong people use 佢( keoi5) instead of 他(taa1), 係(hai6) instead of 是(si6 ), 第一日(dai6 jat1 jat6) instead of 第一天(dai6 jat1 tin1) in daily conversation or colloquial expression.
But the 他(taa1), 是(si6 ), 第一天(dai6 jat1 tin1) are the written Chinese which is still commonly used in the news article, written notice, research article, poster, instruction menu or pamphlet, etc.

佢哋講 — 同學們係朋友
Cantonese 101 gives the example of 他從有名的大學得到了獎學金。
taa1 cung4 jau5 meng2 dik1 daai6 hok6 dak1 dou3 liu5 zoeng2 hok6 gam1
But I never hear 香港人講 “他” — 佢哋講 “佢”
Am I wrong? Should beginners learn 他 and not 佢?
Or should Cantonese teach 佢 and not 他?

功課 （gung1 fo3 ） means "homework". It is usually the assignment given by the teacher.
作業 (zok3 jip6) simply means "task" or "exercise".
